cooks up a 3 way combination plate of burgers presented in open faced fashion which can be combined, stacked, or eaten open faced, in another segment on outdoor cooking and one plate dinners.
Omaha Burgers are featured as one of the meats in this assembly of open faced selections that begin with splitting a large sesame seed bun into 3 sections instead of 2,
and toasting to a light brown, utilizing the pizza stone in the Big Green Egg, charcoal ceramic grill.
The serving plate is greened with 2 varieties of Petite Gem Lettuce and the 3 toasted bun parts laid on top.
A large Portebella Mushroom is pan sautéed in garlic and butter, along with sliced Button mushrooms.
Bacon is crisped in a separate pan.
The Omaha Steak Burger is also pan browned and lightly seared to retain its juices.
On one bun the finished Burger is placed,
the Portabella on one, and the Button mushrooms on the 3rd.
Bacon tops the Portabella, and the Button Mushrooms.
The Omaha Burger is topped with a few Button Mushrooms.
In a separate saucepan, meanwhile, Roma tomatoes chopped in large chunks, have been reducing with soy sauce, mustard, chopped ginger, onion, and garlic, red wine vinegar, tangerine juice, sugar, parsley, seasoned salt, and sesame seeds until bubbling thick, then used as a hot topping for each of the three.
Cooking in the outdoor kitchen need not suffer in these one plate gourmet burger dinners!

outdoor kitchen creations prepared on the

for another one plate dinner
which features a vegetable medley
of Green Cauliflower/Chou-Fleur Verts
to ring a plate whose bed is a white rice cooked in a dark, rich, vegetable stock, then topped with sautéed red onions, chopped carrots, broccoli, garlic, and sliced portabella mushrooms. Long slices of carrot frame the dish.
Omaha Steaks provides the tender white chicken breast which has been marinated in a blend of soy sauce, toasted sesame seeds, sesame oils, ginger, garlic, corn syrup, white wine vinegar, and the juices of oranges and mandarins, also used to drizzel over the completed dish.

Artists of Santa Cruz
is participating in the Broadcast Cable Series
From the Ground Up
by providing the casts of body forms
created by ceramic artist, Richard Smith,
who has finished with these plaster molds
and who is making them available for the
Temple to the Arts being created in the series.
From the Ground Up.
The forms are shown here laid out on recycled pieces of metal roofing, so none of the exterior paint being used to coat the molds goes to waste.
The Paint is recycled paint available from the local landfills, and is being used to stiffen up the molds, protect them from moisture, and will be getting several more applications of various colors to allow them a more appealing and protected surface.
They will be on-hand for the next concrete project, currently being planned to create a pad for the Dimension One Spa, so as not to have any cement wasted.
Once the molds have been filled with cement,
they will be positioned about the gardens and roadway access as sculptural forms which can be embedded into retaining walls or as stand alone art.
Shown here is a form of the artist, Tamara Lynn Scott,
which she painted in the fire tones of yellow, red, and white, to be utilized as mosaic in the fire circle currently underway.

Also featured in the series is a "Green" grease made of plants by Wise Solutions, Inc. who produces
High-Performance Lubricants, Bioremediation, and Cleaners
Protecting the Life of Equipment, People, and Environment
The "Green" Grease we will be featuring is grown and manufactured in the U.S. and is a very high performing product.
It has a drop point (melting point) of 550F, and in addition has extreme wear chemistry and is corrosion resistant while having the ability to biodegrade in 28 days in the aquatic aerobic environment according to an ASTM (American Society of Testing Materials) standard 5864.
Over 500 million pounds of grease is sold every year in the U.S. ! Where does it go? The answer is downstream. It falls out of bearings, and greased joints, and dries and cracks and winds up in the soil, water and off gasses into the air. It also off-gasses harmful VOC’s (volatile organic compounds) that go up your nose and into the atmosphere contributing to green house gasses.
Wise Solutions also can replace any petroleum based lubricant from engine oils to cutting fluids. Our other technology, called colloidal chemistry, can break the carbon chain and clean all that mess up.

is focused on cooking out of doors,
where multiple plate services are not as
practical, and is thusly featuring one plate dinners.
This dinner is being created with the Big Green Egg ceramic charcoal fired grill
which acts like a convection oven and browns the toppings of the stuffed baked potato that is serving as the central focus , as well as the garlic and buttered French breads.
This plate consists of a background bed of Petite Gem lettuce, centered with a large cap of a Portabella Mushroom which has been pan sautéed with butter and garlic, then surrounded by pan sautéed button mushrooms and chopped celery, also in butter and garlic.
the center piece is the stuffed bake potato supplied by Omaha Steaks, with grand finale of crisp bacon strips fanned about and crumbled on top the potato, finished with a drizzel of sour cream and tomato based sauce.
Cooking out of doors can be creative and fun!

Features
Dan Wilson
conducting testing on a variety of Photovoltaic Panels in preparation for the hook up of Grundfos deep well pump capable of being run directly from Solar Panels, making it the choice pump for the series, and for remote water pumping applications.
The Grundfos control panel was opened to check for wiring sizing.
Tests were conducted to see if the pump could be run off the power generated by a normal automobile battery, which did not have adequate amps to keep the pump running.
There was not enough power being supplied from one 130 watt solar Panel to activate the pump.
Next up will be configuring 5 130 watt solar panels in the 48 volt Xantrex Inverter and 8 Deca Gel Cell batteries that comprise the main power system to determine if the main system is adequate to power the water pumping from a 500 foot deep well, up the mountain to a water holding tank, and then up to the building site and water holding tank which will then feed a hot tub, and radiant tube heated floor of the Octagonal cement slab foundation, as well as additional holding tanks for solar heated shower and bath.

continues its preparation of the mountain top to receive a passive rising, closed loop system of solar water heating panels which are first being removed from the previous rack set up, which had been positioned facing south on the uppermost bank location, hanging precipitously and crowded too near the driveway.
Shown here is the collapsing rack, panels, and the body form sculpture with a view to the south , all to be moved.
The weathered wooden rack has been disassembled. The wood holding it for 15 years is now being moved over the fire circle where it will be utilized as evening tinder, cooking fuel, and light, to assist in the burning of the multitudinous scrap branches from trees and bushes being cleared where the new positioning of the Solar Panel Rack will be achieved, in a more roomy environment, below the anticipated location for the Dimension One Hot Tub.
Spring cleaning of the slope and the driveway interior radius below it, has made the slope now open for possible planting of lower to the ground, Pinot Noir vines, or Agave, or jade plants, heat resistent, and/or food producing.
Removing the debris has widened the driveway back to original form, and increased by 3 feet or more, usable driving surface.
Dan Wilson is being featured in the disassembly and reconstruction of the solar heated hot water panel racking, shown here in a western oriented view, with 3 foot by 8 foot glassed recycled solar water panels stacked to be re-utilized in a new rack and location.

with their Portable Shower Cabana Kit,
set up being demonstrated by
Dan Wilson and Tamara Lynn Scott.
Two individuals are needed to hold parts in place while screws are being attached.
This was accomplished by assembly of the parts laid out on a flat surface.
Once the 4 sides were assembled and stood up, the Cabana was moved into place on a leveled site and placed on pressure treated wood.
The lower solid side panels were put into place, then the upper vented shutters, and then the door, prior to screwing the cabana onto the pressure treated base.
A ladder was then needed to drop the roof rafters into place, and the slats.

Great Gourmets
features Omaha Steaks
Sirloin Tri Tip
in a tomato and crème sauce, with garlic, onion, and portabella mushrooms, on a bed of spagetti.
The dish was created by first browning onion and garlic in a small amount of butter and olive oil, then adding sliced portabella mushrooms for a minute or so, until softened.
This mixture was set aside while the Sirloin Tri Tips were browned and then simmered in a small bit of tomato sauce.
Cooked spagetti noodles formed the base of the dish, topped with the garlic, onion and portabella mixture, and the Sirloin Tri Tip and in tomato and crème sauce
The dish is centered with a dollup of sour cream and returned to the heating shelf on the Lynx Grill to keep warm until ready to serve, and while the side dishes of toasted French and Dutch Crusted Breads with melted chedder cheese were prepared.
A Side Salad of mixed greens, radishes, carrots, and crushed crisped bacon, is dressed with olive oil, apple cider vinegar, garlic, roasted onion and red pepper puree and buttermilk.
A 2006 Pinot Noir, from Heart O The Mountain Winery, located in the Santa Cruz Mountains, is featured as a pairing.

Great Gourmets
features Omaha Gourmet Franks
in a outdoor kitchen creation
prepared on the Lynx 36 inch Propane fired Grill
by creating several components
of pan crisped bacon,
Red Kidney Beans cooked together with
fresh crushed garlic,
mildly hot red tomato salsa,
mustard, sugar, Worchester sauce,
which when cooked was removed to the serving
bowls as the base of the dish.
White rice was prepared to create a center focus mound, and as the perfect balance for the spicy bean salsa.
The crisp bacon was added in a circular fanned topping.
The Omaha Franks were pan heated in a small amount of water to prevent sticking, and to allow the Franks to double in size, then cut lengthwise and across and browned.
Once the Franks were lightly browned, Sliced Portabella mushrooms were added to the pan for a minute or two until softened and heated.
The Franks were then transferred to the serving plate to top the red kidney bean salsa base, and the entire plate transferred to the warming rack until ready to be served.
The dish was complemented with a 2006 Estate grown and bottled Pinot Noir from Heart O The Mountain Winery, a small, hand crafted Winery of the Robert Brassfield family, located in the Santa Cruz mountains.

The Big Green Egg Grill, Smoker, and Oven
is being featured in the series:
"From the Ground Up"
Creating Energy Self-Reliant,
Environmentally Friendly,
Homes and Systems
Outdoor Kitchen
The Big Green Egg was chosen not only for its ability to utilize
the Big Egg's own natural lump charcoal, which has no chemicals added, but the plentiful local resources of natural woods , renewable, local energy sources ,
but for its energy efficient construction of high
temperature fired ceramic which holds and
conserves heat, cooking foods faster, and
maintaining more of the natural juices and
nutritional values of the foods prepared.
Based on the 3000 year old ancient clay ovens of China and "Kamada" stoves of Japan, The Big Green Egg has incorporated Space Age Ceramics, stainless steel draft doors, and other innovative improvements to provide a product impervious to weather, with lifetime guarantees and durability.
Because moisture is maintained, foods don't dry out, undergo little shrinkage, and natural juices and flavors stay locked inside, allowing better utilization of nutrition and food value.
It is available with many innovative attachements,
some of which are featured in the two opening segments that introduce the Egg and demonstrate its set up and a meal prep.
Some of these devices include Pizza and bread stones which can deliver brick oven flavors and crusts, special cooking pans, Dutch Oven, and trays, ceramic mounts for cooking chickens upright to allow for self-basting and collection of juices for gravies, thermometers for measuring food doneness, utensils, and ingenious cleaning devices.
Versatility of food preparations, which can be grilled, baked, or smoked at exact temperatures gained through a system of top and bottom dampers, with temperatures up to 750 degrees, give the Green Egg capacity to control internal temperatures and consistent cooking results.
Exterior is non-toxic glaze and the interior self cleans as heat burns off any grease build up.
The Big Green Egg Cookbook contains recipes, as well as the website,
and these segments show a demonstration preparation of pepper and spice crusted meats, with side dishes of grilled asparagus, and toasted and spiced Italian bread.
Following will be further demonstrations for the sister series:
Great Gourmets with guest chefs demonstrating some of their favorite foods created in the Outdoor Kitchen.
